Mumm Shack Burgers

I will warn you all now, when my husband and I create new dishes without consulting any other recipes, he likes to label them as belonging to the Mumm Shack. Cheesy, yes, but I love him too much to say that. 😛

We LOVE turkey burgers, and have them multiple times a week. However, we were getting so bored with them and they were starting to get really bland. So we started playing around with them and have created one of our absolutely FAVORITE recipes of all-time and wanted to share it with you! So here are Mumm Shack Burgers:

 

INGREDIENTS:

Ground Turkey (1 lb)

Oregano

Basil

Ground Pepper

Red Crushed Pepper

Green Pepper

Mushrooms

Onion

Tomatillo Avocado Salsa (or Guacamole)

Eggs (2)

Olive Oil

Serves: 2

 

Directions:

Separate the turkey into two 8-oz sections. Take each 8-oz section and mix it with your preferred veggies (I mix mine with 1/8 cup chopped green pepper and 4 sliced mushrooms. My husband mixes his with 1/8 cup chopped green pepper and 1/8 cup chopped onion). Put some olive oil in a pan and heat it up on the stove. Patty the burgers and add them to the pan. Season each side with the oregano, basil, ground pepper, and crushed red pepper (we are HUGE on spices so we go to town with this, but you can add as much as you would like). Once each side is slightly browned, cover the pan with the lid. This causes the burgers to cook all the way through quicker and more evenly. Once burgers are done, remove them from the pan and place them on their plates. Crack two eggs and cook them overeasy in the pan you just cooked the turkey in. This causes the flavor of the turkey to seep into the eggs. While the eggs are cooking, top the burger with a layer of tomatillo-avocado salsa (can be bought at most grocery stores) or guacamole. Once the eggs are overeasy (yolk still intact), lay one on top of each burger. Break the yolk so that the yolk can run down over the burger and make it juicier. You can feel free to add lettuce wraps if you want it to feel more burger-like, or just use a fork (my preferred option). ENJOY!
